• Too bitter - over-extracted. Try a coarser grind, less coffee, or shorter contact time.
• Too sour - under-extracted. Try a finer grind, more coffee, or longer contact time.
• Too strong - use more water or less coffee.
Also worth checking: filtered water makes up 98% of your cup, so water quality makes a real difference. Make sure your machine is also clean and descaled.
